i think that the most important changes dont take place in the cell wall. U have pealled the potatoes, and the hard outer crust is in the garbage can. U then cut through teh pealled potatoe, thus distroing the walls of the cells that form the eatable part. Thse cell wall aren't to resillient, so no notable changes in terms of helping digestion takes place. Probably the protein ( that are found in any kind of cell wall) suffer some transformation ( at above 50 centigrade protein start to change their properties ireversibly). Probably the most important changes take place inside the potatoes tiny cells with different substantces and cell organells. he part of the potattoe that we eat is rich in depositary tisue, wich contain a lot of starch.

it just breaks down the cell wall.it makes it easier because humans can't digest the microbes that are in the potato.
