Why are most of the foods we eat acidic and not basic?

Alkaline substances often have a bitter taste; strongly acidic substances like citrus (citric acid) and vinegar (acetic acid) tend to have a sour taste. We tend to avoid bitter tastes more than slightly sour ones so our diet has less alkaline foods. I don't know why alkaline foods tend toward bitterness though, or how a food can manage to have both sour and bitter components, so clearly this isn't the whole story.

basic foods have a more bland taste. acidic foods, like salty foods, are worse for you but they taste great!
Basic foods generally taste somewhat bitter.
For example, breads leavened with baking soda, dark chocolate, or olives, often have a faint, unpleasant, lingering bitter taste. All these foods are slightly basic. Although, the fact that a food is bitter does not mean it is basic (e.g. grapefruit)
