A liquid is distilled when is has been boiled (heated into a gaseous state) and then recondensed into a different clean container, generally by cooling it. When impurities in the water have a much higher boiling point, the water will boil off first and the vapor will condense into the container in which none of the impurities exist. Distillation only works for water when everything else in the water will not boil at close to the same temperature- otherwise, bad things will boil with the water and just simply travel in the vapor into the new place. Distilled water itself is a reference to the liquid that has been collected in the new, clean container. Often this process is repeated several times to minimize trace amounts of impurities that can boil with the water, though this method does not guarantee to remove everything.
This is different from RO/DI (Reverse Osmosis/De-Ionized) water, as this process is akin to filtration and does not generally involve any phase change for the water.
Often the purest waters are those that are filtered in multiple ways, as no one method can absolutely remove everything in water.
