Because water is a polar covalent molecule, it is able to dissolve both ionic compounds and covalent compounds and because of the remarkable weak molecular forces that are aso associated with the molecule it is able to hydrate and isolate molecules of other substances from each other so that, once they are dissolved, they stay dissolved. Because, in time, it will disolve almost everything, even granite rocks.
