well to start alcohols are very noticable because they have the very distinctive and massive peak at the beginning of an IR that covers approximaltey from 3400-2500 and aldehydes don't have it .On the other hand, aldehyde (or other carbonyl groups) wouldn't have that drastic peak, instead they would have a long peak (Usually the longest) in the 1760-1600 region. ((( remember if you have a peak in this region it doesnt mean you neccesarily have an aldehyde you could have an ester, carboxylic acid, or a ketone and you have to do further test like an NMR test to indicate which one of the following Carbonyl groups you may have.) if you have both of those peaks then you probably have a carboxylic acid.
