How do you extract chitin from mushrooms?

It's for my research project.

Answer:
try the two step extraction:
1. Remove proteins and alkali-soluble polysaccharides with 1N NaOH
2. Extract chitosan from alkali-insoluble solids with 2% acetic acid.

the insoluble residue is the chitin.
