No, there are no color changes that you can tell for organic compounds they all burn about the same color, but you can make some general assumptions about the nature of the type of organic compound from the way it burns.
sooty - aromatic
will not burn - halogenated hydrocarbon.
steady flame - high molecular weight saturated and unsaturated hydrocarbons (like wax, lighter fluid)
in a flash - low molecular weight saturated and unsaturated hydrocarbon - (like methane, propane & butane fuels)
ketones, acetate (esters), (aliphatic amines) - explosive
I'd like to say go try it yourself, just be really careful as Acetone is rather exceptionally flammable.
