crystallisation is a process in which the homogeneous phase (sugar solution) is evaporated and then cooled down to supersaturated solution. supersaturated solution is the solution with concentration of the solute(sugar) greater than the solubility of solute at certain temperature. after supersaturation, it goes through nucleation, then followed by crystal growth. after crystallisation, the products comes out as crystals and mother liquor (solution with some solute still dissolved in it) with some water evaporated.
so do u realise no chemical reaction takes places during crystallisation?=)
