How about as a lipid barrier in the cell wall? Micelles create this physical barrier. Biologically, I use this concept within billions, upon billions of cells that comprise me. I bet you do too.

Oh and soaps do not necessarily form emulsions. They can. But the cleaning action is really more about differential solubility for the two sides of the soap molecule. The cleaning process can happen impendent of the formation of a micelle or an emulsion. Although soap can be used very effectively to stabilize micelles.
