In Pickle preparation what is the purpose of adding Oil?

Answer:
Oil is not added in large amounts. It is added so as to preserve the pickle by preventing the entry of air and aerobic bacteria
OIL? You got it right? OIL??What are you preserving?
I have never heard of adding oil in making pickles, I would think that it would make the pickles limp and disgusting.
It blocks out the water as well as air supply ao that these 2 essential growth factors are not available for bacterial/ fungal growth to occur and spoil the pickle
Pickles don't need OIL !.
It's Vinegar, Spices, a little sugar and salt, the item being pickled and an air tight lid on the container.
(And, a storage shelf for a couple of weeks or so).

(I keep pickles in the fridge for weeks on end with no oil and no bacterial growth).
Oil floats on top of the container. The oil layer keeps out mold spores and other undesirable organisms. It also suppresses the foam that tend to form.
Pickles made in India require Oil. It is used 1) as a preservative. The pickle shall have good amount of oil so that fungus does not affect it. In this process, you can preserve the pickle for more than a year; 2) to give flavour to it.

Many use Sesame oil (Til oil). Some use mustard oil; olive oil can also be used. But in India it is not used since it is not available.
Indian pickles use oil to enhance taste, preserve essential oils, and extend shelf life. It also tones down the very spicy hot chillies used.
Home made pickles do not have artificial preservatives. Pickles are usually kept in the sun to mature. The UV helps in destroying food spoiling bacteria.
OIl in pickle acts as a preservative. It prevents fungal growth as oil floats on pickle and covers the surface thus preventing unwanted contamination.
