How can I freeze-dry or otherwise preserve my own food?

I'm taking some people with a very fixed diet to another country for two weeks. We need to be able to take our own food with us. How can we do this? I was thinking of finding a vacuum pump and some liquid nitrogen to set up my own freeze-drying system. Any suggestions?

The easiest thing to do would be to go to a camping store and buy the freeze dried foods there, or get MRE's (Meals Ready to Eat) from the Amry surplus store.
Buy a food dehydrator. My friend did this when she went with Operation Smile to Vietnam. It worked really well. You can also use your oven as a dehydrator but it can be tricky.
If you have both the time and resources, you can buy a food dehydrator and use that to dehydrate fruits, vegetables and meats. Its also good for dehydrating garlic which is good for the imune system.
