Why the alkyl halide product must be dried carefully with anhydrous CaCl2 before distillation?

To ensure there is no water present. If there is water present, it might cause a hydrolysis reaction instead.

the CaCl2 is to "dry" the reactant so that there is no water present. the water ight cause a hydrolysis reaction and instead you will get an alkyl alcohol as opposed to the alkyl halide. the water will add across the double bond just as the halide acid would do.
