It depends on the food. There is usually a thermometer that will indicate the internal temperature. If you're running a lab, I'd stick to the procedures. A high school lab may use styrofoam cups and cardboard. Given that you're burning food, it's probably not high school and you're probably not using styrofoam. The internal temperature could range anywhere from room temperature for a low energy food (i.e. celery) to several degrees above boiling point for something that is high energy (i.e. oil and sugar rich products).
Now that I think about it, you have to have a thermometer to tell you the temperature, because you need to know how much energy is released.
