This might be an interesting project. You'll find that substances dissolved in water will change the boiling point. Different substances will have different boiling points.

Careful with the ethanol. Hate to have a fire in the lab. It too, will change the boiling point of the water. You might consider antifreeze instead of ethanol. It's not flammable and can have a dramatic impact.

The project won't take a really long time, so you can go with more tests. I'd be thinking 10 instead of 5.

This sounds like a great project for your science class. Here are some ideas for substances that will easily dissolve in water that you shoud be able to easily get a hold of at any gorcery store:

table salt
sugar
baking soda
vinegar
rubbing alcohol
epsom salt
sugar substitute (like "Equal" or "Splenda")
