A volatile substance is one which vapourises easily. So ether is very volatile, alcohol a little less so, water less again and iodine even less.

A non-volatile substance does not vapourise easily - so most ionic solids (e.g. salt) and giant covalent structures (e.g. silica) are very non-volatile.
It is something that will not react to certain chemicals, or, in simpler terms, something that will not blow up in your face under any kind of extremes.
Non- volatile is a substance which does not evaporate rapidly at room temperature / at NTP
