Im not sure if I quite understand what you are asking but here is some info from a food scientist viewpoint...Proteins unfold and spread themselves as the interface between water and air which produces foam. This is produced by 1. mixing the liquid phase to generate air cells 2. releasing air cells in the liquid phase.
