How can I make sodium acetate? What do you do with the baking soda and the vinegar?

u can make it by reacting acetic asid & sodium hydroxide .
Just mix the two together. In a very large bowl. You'll get a LOT of fizz (and will see why this is the reaction of choice for model volcano builders). What you'll have left is a mixture of water and sodium acetate (How concentrated? Depends on how much you use). You can boil off the water to leave the acetate in the form of crystals, since it decomposes at 324 degrees Celsius and water boils at 100 (in STP).
