Depends what you want to do. Lockheed Martin is the largest Defense contractor in the world, and they still make F-16, F-22, and F35, and so on. Boeing is still making defense and commercial aircraft. There is also helicopter design, as well as Trainers and simulators.

Many good universities, such as Texas A&M in College Station, about 100 miles from Houston, TX.; Purdue; M&A U in Irvine, Ca; U of Ill, in Urbana; U Mich;

One Systems Engineering foundation you need to learn is design and logical problem solving methods. How to collect Requirements, Create an Abstract Logical Design, and how to develop a technical physical design. It also helps if you understand how to lead teams... all the soft management stuff.

In addition to lots of math and advanced calculus, plan on taking lots of computer and computer graphics course; as well as advanced physics <electromagnetism, RADAR, LASER. You may want to see if you can learn more about low observable and stealth technolgies, thru the Chem dept.

And it is critical to take lots of tech writing courses, and many debating courses to be able to get your ideas across.

Finally, You might try to intern with a big company... it helps for getting a job afterwards, then plan to go for a M.S. and an MBA. If you like bleeding edge technology and have a mind for detail, you may eventually want a PHD.
