GPS stands for Global Position System
(official name: NAVSTAR GPS)
The Global Positioning System involves a set of satellites orbiting in medium earth orbit. It used to have 24 satellites but I think that number has been increased for redundancy. The other components to the GPS are the user segment and the control segment. The user segment is of course the GPS receivers. The control segment is responsible for "looking after" the satellites, and this is done so by the United States Air Force.
Let's forget about GPS for now. I'll try to explain to you how it works in more general terms.
Imagine you get lost somewhere and you have no idea where you are. You ask around and get information that you are 300km from City X, 150km from CityY, and 210 km from CityZ. With that information you can draw 3 circles which have radiuses of those distances. Where the 3 circles intersect, is where you are.
GPS works on the same principle. You need at least 3 satellites to get your position. Instead of getting the distance to another city, you get the distance to each of the 3 satellites, and from that, your position on the planet can be extrapolated. How is the distance worked out? Remember from high school physics, if you know the time it takes for a signal to go from the satellite to the GPS unit, then you can know how far you are from it. Instead of circles, imagine spheres. Use earth as 4th sphere. Where the 3 spheres and the surface of the earth intersects, is your position.
A 4th satellite will be needed for extra accuracy. I *think* the 4th satellite might be for synchronizing your GPS unit clock with the satellites' clocks.
I've seriously over simplified the explanation, but I hope that will do :)

A GPS reciever works such that it calculates its position by measuring the distance between 1 or 2 other GPS satellites. Since time is constant, you could calculate your distance traveled, speed, or even acceleration.
Keep in mind the military has limited the power of GPS to be more inaccurate than it should. (in order to protect their privacy).
