If its an induction motor, you need to change the frequency to change the speed. You can buy variable speed drives (VSD's) that convert the ac mains into dc then back to ac at a variable frequency/voltage. These are available in single phase but would usually be used by giving 3 phase out, then having a 3 phase motor. There are implications with some of the numerous types of single phase induction motors to try and vary the speed.
If its a commutator motor then you can simply vary the voltage. This is often the way its done in domestic appliances. The motors are slightly more expensive but works out much cheaper than an induction motor and VSD. The motors also require maintenance of brushes etc (not that suppliers of domestic appliances probably care about that but you may consider it for any project)
Well, that depends on the source of the A/C and how much control you have over it.
You can vary the speed by varying the frequency of the A/C supply. But if you are using a common A/C source (power company), you will not have access to do that.
If you were driving the motor with a signal generator, the frequency control would adjust the speed.
