How can I limit a 240v to 50v transformer at work so i have a 50v output as i have an output of 27v each phase at the moment and need it to be 25v

Are you measuring it under load? The voltage will drop when you load the transformer (because of winding resistance) and you may then find it is close enough to 25V. A 10% error is acceptable for most purposes.

Alternatively, you could feed it from a Variac (variable autotransformer) if you can find one. You would have to check that it could handle enough power for your application.

If it is DC you are looking for you can use a zener circuit for that, just watch your current ratings? For AC you will need a TRIAC circuit?
