You can utilize a little motor from toy cars or somthing. Perhaps a toy boat motor. Attach a propeller to it. Let water run on it such that the propeller spins. Current will be generated. You only need enough to make a flash light illuminate.
In addition to the items described above, you could buy a small electrically driven pump to return the water from the outlet to the top of the dam so that the model can operate continuously with a small amount of water.
