Which of these degrees is BEST?

You do not list any 4-year degrees, so I suppose you intend to attend comm. college and try to transfer to MIT. Whichever you do, take as many hard or honors courses as possible, study as much as it takes to get good grades, and talk with your teachers (to discuss subject matter they love, not to complain about your grade.) A strong recommendation letter from a college teacher may get you into MIT with a scholarship.
NOW, I think a Biotechnology Certificate is best. Exciting things are happening now in biology now that the Human Genome Project is complete. Also good would be a bio or microbio comm. college major. Learn how to use some computer programming language, since nothing happens in science these days without computers being involved. An insurance policy for your career would be some math courses. If you are weak on working with equations and formulas then science/technology isn't for you.
Now about MIT. It is a fantastic place. In the new biology there is nobody more exciting than Drew Endy who teaches Biological Engineering at MIT. You can Google him, or go to http://web.mit.edu/be/people/endy.htm... for more info.

p.s. I make my living most of the time designing and writing
computer software. I have a math Ph.D. and as you can see I'm bonkers about biology, specifically cell biology including genetics and immunology. I wish I were starting out again!

I would go for mathematics... it is applicable to almost everything.

The AS with mathematics is my first choice, however, I would inquire first as to the transferrability of credits towards your degree at MIT. You will learn, sometimes the hard way, that credits do not always transfer or may not be applied to the degree program that you are choosing at MIT. You don't want to have to retake classes due to the fact that MIT doesn't recognize them.
If your goal is to go to mit you need to contact mit and see what classes can trasnfer. They should have a list they can send you or might just check there website. Then look at your list and see what one has the most transferable classes.

1. Associate in Science Degree with a Field of Study in Engineering Technology- Electronics
2. Associate in Science Degree with a Field of Study in Engineering Technology-Computers

I asked myself the same question 10 years ago and I went with Math since it applies to problem solving which is what all engineers, software developers, etc do.
I would choose the math first and then the electrical engineering
Math most probably would be your best bet as the Math progression at Community Colleges is almost exactly the same to that in Universities. MIT having the reputation that it does, will be exceedingly hard to transfer into. 4.0 GPA from community college is probably about what you're going to need.
