The steering ratio of a car is defined like this:

Turn the steering wheel, so that the front wheels turn. The wheels will not turn by the same amount, however. The 'inside' wheel will turn more than the 'outside' wheel. Let's say you turn the steering wheel 360 wheels (1 complete turn), and the inside front wheel steers 26 degrees, while the outside wheel steers 22 degrees. The average amount of wheel steer is 24 degrees. Then you simply divide the two angular changes:

(360 degrees) / (24 degrees) = 15/1 = 15:1 steering ratio

The larger the steering ratio, the more you have to turn the steering wheel to make the car turn a given amount. Race cars usually have a smaller steering ratio for quicker response, while passenger cars have a larger steering ratio for easier driveability.
