In general, What is the advantage of wireless over sensors?

for eg:
If some project is done with sensors like 'water level control'
then how it differs & benefits in case of using wireless?

i think you are confused sensors and wireless are totally different things...... sensors senses anything like a particular water level and gives an output (example transducers) whereas wireless can be anything concerning remote things
You can say that a sensor senses and then gives output to an alarm
There can also be wireless sensors in which no wires are involved...These can be mechanically created if you are creative enough...
wireless can be better, becuase cables are hard to run in certain places. wifi is popular in houses because it is hard to run cables in your house. Sometimes it is cheaper too, slap in a radio sensor and read, no cables to run, less labor.

The advantage of wireless sensors depends on the situation.
There is generally a cost involved in installing cable which can be eliminated in many cases with a wireless data connection.
Data cables can be inconvenient for other reasons. For example the location of the sensor may change.
Wireless is a means of transmitting signals. Sensors are a means of generating signals for the particular variable (Level, temperature, pressure etc..) being monitored.

There is no comparison possible between such unrelated entities.

However, one can use wireless in conjunction with wireless for remote monitoring in case of inaccessibility, chemical or nuclear hazard, or a mobile source (Such as a mobile patient being monitored)
Times have changed & advanced, things are not preceptual anymore..You may find something here...a "Wireless sensor"
