Will it last for a few years of occasional use, or will it quickly wear off in a month, flake, etc.? All other aspects of the watch are spot on (i.e. movement). I am just curious if 3 mils is enough or completely insufficient. Thank you very much, in advance, for your answers and comments.

gold is very soft...and 3 mils is very thin. the 316 ss is also quite soft. overall there will be wear in places over time...and it will scratch...
titanium nitride is better and far more scratch resistant, but still has the gold colour.
i dont know
3 mils is perfectly fine, unless your planning on throwing your watch down a rocky terrain.
