it mentions two years but over time i have seen mentions of two to five years. but a lot of that relates to odd flavors. if stored properly - filtered and sealed it would last much longer than that for emergancy purposes.
as for the vodka...if it is a descent brand in new sealed bottle stored in a dark cool place then all of the same would also apply. there would be flavor changes just like wine but it would still serve the purpose.
It is better to discard empty plastic bottle after single time use.

They both will stay good for a long time if properly stored. Some taste change could happen.

Most water in plastic bottles expire in 1-2 yrs after packaging. Read what the expiration date says on the bottle! It should be LISTED!
it all depends on the amount of chlorine in the water, how sterile the bottle is and how well sealed.
a bottle that was sterile, with healthy levels of chlorine in the water and air tight will last near indefinitely.
otherwise you will get algae, bacteria and fungus growing. although you can boil this for a while and it should be good again.
vodka wont go off as alcohol is a preservative.
