Go back to your old diet from when you were sick. If that's what made you feel healthier, then that's what you need. Also, talk to a phsysician about this. They can help. Just, don't go on any pills! Trust me, it makes you feel and act like hell!
I'd say you've pretty much answered your own question, carbs are a very tricky thing and that's most likely what's causing your fatigue, not to mention if you aren't getting enough protien sometimes that causes a little draw back on your energy levels. But besides making people cranky, carbs can highly effect your energy level. The easiest thing to do if you don't feel like going through the whole "Doctor visits" thing is to do your own testing, try two or three weeks of different dieting methods (high carb, low carb, moderate) and just see which diet improves your daily energy level. If your feeling adventurous, try messing with your protien intake as well.
First, always check with your Doctor before you take any ones advice, including books.
Because carbs such as bread/pasta/rice turn to sugar, it may be that your blood glucose is trying to re-adjust to the new levels with out carbs. Try eating fresh fruits, vegetables, nuts.
Also exercise will help, start with a short 15 minute light work out, you will find yourself doing an hour in no time, your body will begin to crave it.
Eliminate as much stress from your life as possible.
Make a list of the time of day, what you ate, exercise, etc., to see if you can find a common source of your tiredness, then change the habit, etc. This will also help your Dr. as well when you go for a check up.
