Whats better 1 battery or 2 batteries for a solar power array and why ?

Depends on how much your needs are.
O.K. Then-I have 5 batteries, and they won`t run a 120 circuit-I thought you need at least 10.

Redundancy is nearly always better in anything man-made. If there is the proper switching, if one cell bank shorts, you can continue with reduced efficiency on the other, until the bad one can be replaced.
Better to run at reduced capability until repaired than to be dead in the water.
