Envirnmental history: general; What environmental occupation existed or might have in the middle ages?

I like reinacting because it is way of experiencining history by practical application. I am aware of the obvious like farming (agriculture and hordiculture), Rangers (police,military,security and para military) and Foresters (logging and forestry industry); but what if any practical applications of jobs envolving environmental duty besides the formentioned existed? PLEASE read before answering. Thank you.

The construction of the sewer system to remove human waste. Even land fills exixted in early times.
