Where does one find out how much carbon a specific tree offsets?

eg. A willow tree, or a gum tree?

I never heard of a gum tree...try looking it up on the internet, ie. Google... under encyclopedias.
You need a bit more information than that.
i.e.
A 30ft tree will absorb much more than a 6ft tree, no matter what species.
I think the size of the tree determines the amount of carbon offset.
It's complicated, and involves a lot more than simple photosynthesis.

One key factor is what happens to the tree at the end of its' life. Trees that produce wood that can be used to build things are far superior to trees which will be left to rot.
depends on what type of tree and how old it is and over what period of time you are talking.
Also depends on what company you are purchasing your carbon offsets from and what they calculate it to and how they promote the forestation growth...
In Australia one of best ways to sequester carbon is through a mix of native trees that are planted for purpose of reforestation and carbon sequestration.
