You could use a gallon milk jug and put old veggies in it. Put a stopper in the top with some aqarium hose going to a jar with a lid and water in it. Stick the hose thru the lid and put the end under water. Bubbles will form as the vegation rots producing methane gas. You can also pull the hose out of the lid and strike a match, but be careful. It will blaze. Do that part outdoors. Kids love to see the ball of flame shooting out of the lid! BE CAREFUL!
You could have them build a terrarium and then introduce various problematic pollutants. The result could teach them about toxic pollution, eutrophication in lakes, etc.
You could set up a greenhouse to demonstrate the greenhouse effect of carbon dioxide, methane, etc. "Look kids, the plastic wrap is like a blanket of gas that holds the heat in." Try setting it up so that the plants die when they get too hot.
I think the understanding of environmental issues should be left to the adults. But taking care of the environment can be done by everybody. Instead of teaching them about the issues, teach them what we have now and how to take care of it so that it is still here when they are grown. Help them plant a tree or grow a garden. Offer different craft kits that will help them do this. You can post information on things like how to keep our waterways clean and give a list of activities that they can do to accomplish a certain task in that area. When they accomplish a task, make a printable certificate available to them. That will keep them coming back and learning. You may not be able to sell much in the way of merchandise to children, but you can teach them a great deal. Make it fun and they'll get it done.
