every interview I have ever had over 25 years have always ended " well, I have another couple of people to see" are they mostly lying

It's very rare that you'll be told there and then if you've got the job or not. Most companies have a HR process which means they have to complete documentation and justification which has to be signed off before they can give someone a job. And they don't usually tell the unsuccessful applicants until they've told the successful one.

A woman I knew had the job as Personal Assistant to a Director of a well known and highly regarded British ''Institution,'' and although not within her job description, she could type amazingly fast - in three languages (while speaking four) + shorthand in two of them (plus English).
She held the same post for almost 20 years - until she was made redundant. Following a short holiday, she began applying for jobs, believing she wouldn't find it difficult to obtain employment.
In 12 months she applied for exactly 300 jobs (and included an SAE with her resume) and received just '3' replies in return. None of which lead to an interview. Following that, she went back to her old employer who somehow 'switched' things for her so that she found herself re-classed as in 'early retirement.'
I love the term / title, 'Human Resources,' because my (somewhat) negative experience has given me the idea that it is the job of this department to 'Dispose of these Resources' - and should best be re-branded - 'EXIT.'

It also depends on the way your resume looks now, after so many years of work experience and after so many jobs you have done. You should pay attention that there is nothing in the cv that could make the interviewer change his mind or pick someone else for the job.
