Why would God use dust when animal life existed when he created man.?

God did this because he can do anything. He is the creator of the Earth you know. And why you ask this?! he did create the whole universe. And waiting for everything to come is taking the long way around. Because for sure he can do anything.. and i don't question that... neither should you
Kinda makes you wonder why he didn't just snap his fingers and "poof", make the universe in an instant. If God can do anything, and at the time was alone in the universe without worshippers, who the heck was he trying to impress, anyway?
And what the hell was he thinking when he created giraffes?

Long way around for what?
well i can tell you,because i know him well,why he did that is because using animal life will not establish Gods purpose of making man in his own image,we are Gods reproductive you understand.
When reading Genesis, there is a key to what the scriptures are saying. Every other creation God actually spoke into existence with the words let their be. However, with man, God actually states let us make man. This gives us a special relationship with God. He desires and wants a personal relationship with us and created us by his own hands. He was literally touching our lives as he can now.
First, please understand that most writings, esp. the Bible, are figurative, not literal, parables. Things that we have come to recognize since then did not exist in vocabulary or experience at the time of those writings...the authors did the best they could to explain the "unexplainables" with what they had...it's also been edited & many authors negated in the version you have today. Sooo, when you read, from whatever literature you choose, take what rings true & useful to you, and simply leave the rest...it is the beauty of the written artform.
Now, with that in mind, do you not imagine that the human vehicles we incorporate were not created in the same manner as all other lifeforms here? They are Earth bodies, just like any other creature of this planet...organisms created through adaptation & the evolutionary process...same as all beings everywhere in Creation.
You see, God set the becoming into motion...the rest made of Itself...Do you imagine that this planet is the only one available to have a lifetime? Do you imagine that human is all we can be? That this dimension is it? There's a much bigger picture than you, in this state could even begin to see...and that's the beauty of the Journey, Love! And a Good one to you!
