Research suggests that it is probably the convoluted fissures in the brain that dictate intelligence. The more convoluted the fissures are the more surface available in the brain.
Just like a chip, a portion of small mcdonalds style chip has more surface area exposed to hot oil when fried than the same weight in thick cut chips.
Therefore small chips contain more fat.
