I think she's being very modest. If she's a quiet person, she's probably timid, and didn't like the attention being drawn to her when her friend announced her being the champ. She appreciates the compliment, but I guess it could also mean that she *could* be insecure for not agreeing with the compliment, but saying that she might not win the next time. Negative thought there. Nothing's wrong with her seriously if you base on this, but if you find that her past behavior is similar to this, she could have low self esteem.

she may have low self esteem and she thinks that she will not be the champ for long.
She is a good winner. She is demonstrating class. The only thing worse than a sore loser is a bad winner.
She is shy, and does not like to be the center of attention. Or she is just being polite (no one likes a braggart). Or she has self esteem issues. Or she is looking for attention by playing at being hurt. It could be a lot of things. If she is your friend, just take her as she is.
