I don't know why a sociopath would want to. One of the hallmarks of sociopathy is an inablity to care about others or to empathize with their feelings. So why would a sociopath gravitate to a councelling position?

Definitely! A sociopath would love the control and power of "helping" others. Unfortunately there are sociopaths in every field, but there may be a few more in addictions. If someone is an addict and ready to get help they can get it a lot of different ways and luckily the health of their counselor won't be a big issue. Counselors just guide you through things, but the client does the work.
A sociopath is someone who appears completely normal, but turns out to be pathological. Socio- meaning socally acceptable. So, really anyone could be a sociopath even a counselor, but they generally wouldn't take a typically caring posistion.
Sociopaths are actually quite capable of functioning in many career choices, so I see no reason why if one was determined enough - a sociopath couldn't function as a counselor. Whether they should is another matter.
A significant number of sociopaths actually go through life undiagnosed because of their ability to manipulate and such.
