In a hostage situation, does the criminal ALWAYS have to hurt the hostage?

No, many are resolved peacefully, through surrendering, other times, the law enforcement types succeed in stopping it.

The times where it goes bad, like the Israeli Olympics Team, those are the ones that stick out the most vividly.

It's known as the Stockholm syndrome and was thusly named due to a Swedish bank siege thirty years ago that describes the bonding of hostages with their captors. Despite threats by robber Jan "Janne" Olsson to kill them, the four workers held in the bank vault began to side with him and criticize those trying to rescue them.
Nope. Usually comes from the problem of feeling like losing control and needing someone to blame.

The best criminals plan for all eventualities. Then there is no need to hurt hostages (technically the best plans avoid the need for hostages because they just slow a criminal down anyways!)
No ! The only violence comes from the deranged; mentally challenged; & when the captor feels trapped in a life threating condition, etc.
