What does it mean when people say that things like getting beat up, "build character"?
Answer:
They mean it's supposed to make you stronger mentally and you learn from it. I happen to disagree.

Getting your * beat is normally known as a way of humbling a person. Let's say you are a smartass and you piss someone off,they beat you up,then maybe you'll think twice before starting crap up again. Knock someone off their HIGH HORSE if you will !

I think there is a biblical part to this with what doesn't kill us makes us stronger.
Personally getting physically beat up doesn't build character directly. I think it can build some type of character, but not necessarily make you stronger.
Getting emotionally beat up may effect you negatively and have you avoid things.
I think it comes down to building character through experience. Getting beat up is one experience, but not necessarily the best learning. I think we learn most from our mistakes.
It's along the same lines of: "What doesn't kill you makes you stronger". Getting beat up or going through difficult times tests a person's resolve and provides valuable life lessons. So, if you live a sheltered life where everything is safe and goes smoothly, you will have less wisdom than a person who has had it tough.
