Yep, that's what lucid dreaming is.
It's not common, but not altogether rare either.
One of the most frequently used technique is simply to make a habit of periodically asking yourself, "Am I dreaming?" and see if you can do something "impossible." When I do that, I try to fly, and if I can fly ... I'm pretty sure I'm dreaming!
Also, doing meditation tends to make many people more likely to have lucid dreams. (And the Tibetan Buddhists even practice something they call "dream yoga" with lucid dreams.)
Stephen LaBerge does a lot of study of this.
